Truffles with cocoa, coconut and walnut praline

Ingredienti

  • 300 ml whipping cream
  • 70 g butter
  • 568 g good dark chocholate (I used 70%)
  • cocoa, grated coconut, chopped walnuts praline

    Preparation

    Melt the butter with the cream with low temperature and just when begins to boil, remove from heat and pour cream and butter over the chocolate (chopped into small pieces).

    Melt completely. Should remain some small piece of chocolate. In this case, you can put everything in the microwave for a few seconds, or in a double boiler.

    Allow to cool in the refrigerator overnight in a covered container.

    The next day, form balls and roll in some in the cocoa, some in the coconut and other in the chopped walnuts praline.
    To make the balls all of the same size I have used one of those dispensers of the size of 1 tablespoon.
    If you do not have the walnut praline, you can use all that seems most greedy and inviting.

    This recipe can become a recipe suitable for lactose intolerant or allergic to lactose if we use the cream and butter without milk proteins (possibly not margarine).
